Campfire Cookies




I was going to make regular chocolate chip cookies at first, but after finding this recipe I had to make it and I’m so happy I did. They’re gooey and warm and are the perfect cookie recipe!

Ingredients:

1 cup (5 ounces) gluten free flour (I use @bobsredmill)

3/4 cup graham cracker crumbs (from about 4 sheets graham crackers)

1/2 teaspoon baking soda

1/2 teaspoon salt

8 tablespoons unsalted grass fed butter, at room temperature

1/4 cup sugar

1/4 cup brown sugar

1/2 teaspoon vanilla

1 large egg

1 cup marshmallows torn into little pieces. I used vegan marshmallows.

1 cup coarsely chopped organic milk chocolate, I used @altereco_foods

Instructions:

1. Adjust oven rack to middle and lower positions and preheat oven to 350°F. Line two baking sheets with parchment paper. In a medium bowl, whisk together flour, graham crumbs, baking soda, and salt; set aside.

2. In a large bowl, beat together butter, sugar, and brown sugar until fluffy. Beat in vanilla and egg. Add dry ingredients to bowl and beat just until dough comes together.

3. Use a rubber spatula to fold in Mallow Bits and chocolate. Drop dough by the rounded tablespoon onto prepared baking sheets. Bake cookies until golden, about 12 minutes. Let cool 3 minutes then transfer to a wire rack to finish cooling.
